How to Cook Vegetable and Beef Bolognaise

  • 300 grams extra lean beef mince
  • 2 tea spoons olive oil
  • 2 garlic cloves (crushed)
  • 1 large brown onion must be finely chopped.
  • 1 large zucchini (grated)
  • 1 large carrot (grated)
  • 200 grams broccoli trimmed and finely chopped
  • One celery stalk finely chopped and trimmed
  • 2 x 400 grams cans diced tomatoes.
  • 500 grams dried spaghetti pasta
  • 400 grams can brown lentils pasta
  • Fresh oregano leaves to serve

Step 1

Warm oil in a big pot on medium high heat. After warming oil add onion, mince and garlic. Cook and move with a wood spoon to crumble the mince for five to six minutes or until everything get brown. After this add zucchini, broccoli, carrot and celery. Move and cook for five minutes or until all vegetables get soft. Now add tomatoes and reduce heat to medium low. Boil for 15 mins and add lentils for the last five mins of cooking or until sauce get chunky.

Step 2

In the intervening time chef pasta in boiling salted water for this use a big saucepan. Must follow instruction printed on the packet until pasta get soft. Add 500 grams dried pasta in pancetta, spaghetti and tomato frittata and add other pasta to beef mince mixture. Now divide into bowls and top with oregano leaves and your Vegetable and Beef bolognaise is ready.
